About Overnight Oats


Looking for the taste of pumpkin pie without the guilt? This overnight oats recipe can be prepared the night before and is a great way to enjoy seasonal flavors. It was inspired by Trader Joe’s Pumpkin Overnight Oats, and is great with a dollop of whipped coconut cream on top.


Since I limit my intake of almonds (I have a slight sensitivity), I omitted the almond butter included in the original recipe. Add a tablespoon or two for some extra protein and for a taste that better imitates the original recipe!

Recipe


Copycat Trader Joe’s Overnight Oats


Gluten-free


Ingredients

  • ½ cup milk

  • ¼ cup pumpkin puree

  • ½ cup rolled oats*

  • 1 Tbsp date paste/syrup

  • 1 Tbsp chia seeds

  • ½ tsp cinnamon

  • ¼ tsp nutmeg

  • Pinch of sea salt

  • Optional: 1 Tbsp coconut cream, chilled then whipped (for topping)


*To ensure your oats are gluten-free (have not been cross-contaminated during processing), be sure to double check the label and ingredients on your oats.


Instructions


Mix all ingredients together in a container or jar until well-combined. Store in the fridge overnight (or at least 8 hours) before enjoying. Consume within 4-5 days for best quality and flavor.
