Austrian Linzer cookies are characterized by their signature sandwich look and created with a special cookie cutter. This recipe replicates the Linzer cookie look but with simplified steps. All you need are some basic pantry staples and a couple cookie cutters for these pretty cookies.

Easy Gluten Free Linzer Cookies


Gluten-free | Dairy-free


Adapted from The Pretty Bee


Ingredients


Yields ~20 cookies (depending on size of cookie cutters)

  • 1 cup plant-based buttery spread + 1 Tablespoon (set aside)

  • 1 cup organic cane sugar

  • Âź cup unsweetened applesauce (or one 3.2 oz applesauce pouch)

  • 2 ž cups Gluten-free flour

  • Âź teaspoon sea salt, fine

  • Raspberry jam

Optional: powdered sugar for sprinkling


Instructions

  1. Wash hands.*

  2. In a large bowl, mix together the buttery spread and sugar until light in color and fluffy in texture.

  3. Mix in applesauce until evenly combined with buttery sugar mixture.

  4. Add the salt and flour, making sure to add the flour only one cup at a time.

  5. When the dough thickens, separate it into two bowls evenly and cover it. Set it in the fridge for 30 minutes to one hour.

  6. Once the dough has chilled, take it out and kneed in ½ Tablespoon of plant-based buttery spread into each ball of dough.

  7. Preheat the oven to 350℉ and line a baking sheet with parchment paper.

  8. Roll the dough out between two sheets of parchment. Use cookie cutters to create shapes, using basic shapes to make the bottom layers and using smaller size shapes to cut “holes” or “window” shapes into the top layer. Be sure to match each top with a bottom so that the correct number of cookies are made.

  9. Bake for 10 minutes.

  10. Once cooled, sprinkle top layers with powdered sugar. Spread the desired amount of jam on the bottom half of the cookie and then use the two layers to create a “sandwich”. Enjoy!
